Today's new recipe is for one of my favourite summer drinks - Lemon Iced Tea.
Iced Tea dates back as far as 1879 when it appeared in an American cookbook called Housekeeping in Old Virginia. The recipe was relatively simple with sweetened tea being served over a couple of pieces of ice.
As Iced Tea grew in popularity flavours began to be introduced. You can now buy it in a wide variety of flavours from peach, mango and even made with green tea.
Sugar vs Honey
Personally, I don't like my iced tea to be too sweet. I prefer to be able to taste the tea and fruit so I make my Lemon Iced Tea with honey. I think it really compliments the lemon flavour and it keeps the calories down to 49 per glass.

Forget shop bought and make this easy Lemon Iced Tea all you need is fresh lemon juice, honey and tea bags.
Place the lemon juice and honey in a saucepan over a medium heat
Simmer for 5 minutes stirring occasionally
Remove from the heat and allow to cool
Place the boiling water and tea bags in a jug
Allow the tea to steep for 20 minutes
Remove the tea bags
Stir in the lemon syrup, sliced lemon and cold water
Serve over ice
