Since it has been snowing here for the last day or so I thought it was time to share a winter warmer recipe for Chicken and Lentil Stew.
It doesn't take long to put together, about 40 minutes. This recipe can easily be prepped ahead and reheated if you are short on time.
It is packed full of chicken, peppers, onion, courgette, lentils and chorizo. I've also added in some garlic, smoked paprika and a little chilli so the dish is really packed with flavour.

Looking for a real winter warmer recipe then try my Chicken and Lentil Stew with peppers, onion, courgette and chorizo.
Place the olive oil in a large saucepan over a medium heat
Add the onion, garlic, chill, pepper, courgette, chicken, chorizo and tomatoes
Sauté for 5 minutes
Add in the smoked paprika, lentils, passata and chicken stock
Bring to the boil and simmer for gently for 30 minutes
Season to taste
I served mine with green beans and roast potatoes
