Hello everyone, wake up to these delicious Easy Blueberry Almond Croissants. They only take 5 minutes to prepare and 15 minutes to bake in the oven.

Having a pastry like this is one of my favourite breakfasts. Absolutely perfect with a fresh orange juice and a big cup of coffee. These Easy Blueberry Almond Croissants are my go to breakfast pastry at the moment.

I've made a silky almond cream to spread into your croissants. Top with blueberries and bake for 15 minutes. It gives the perfect combination of crisp pastry, soft cream and juicy bursting blueberries.

Description

Brighten up your breakfast with these Easy Blueberry Almond Croissants. They only take 5 minutes to prep and 15 mins to bake.

Ingredients
  • 1 egg
  • 1/2 tsp almond extract
  • 30 g butter
  • 1 tbsp caster sugar
  • 30 g ground almonds
  • 4 croissants
  • 4 tbsp blueberries
  • 1 tbsp icing sugar
  • 1 tbsp flaked almonds
Instructions
  1. Preheat the oven to 180 oC

  2. Whisk together the butter, egg, caster sugar, ground almonds and almond extract

  3. Cut the croissants in half lengthways

  4. Spread the almond fillinf on each pastry

  5. Top with the blueberries and close the croissants

  6. Bake in the oven for 12-15 minutes

  7. Dust with the icing sugar and flaked almonds
