Mexican Sweet Potato Toasts

Trying something new for breakfast like these Mexican Sweet Potato Toasts. I first saw sweet potatoes used as an alternative to bread/toast a couple of years ago when I was out for brunch with friends.

I'll be honest and say I wasn't convinced until I tried it but now I'm definitely a convert!

Other Toppings

If you don't fancy the breakfast toppings I've used on my Mexican Sweet Potato Toasts you could try some of these options:

  • Make it vegan - load with your favourite Mexican beans, salsa and avocado
  • Top with slow cooked BBQ pulled pork or your favourite chilli
  • Sliced gourmet sausages with roasted onion and peppers
  • Pizza style it with tomato sauce, mozzarella and basil
  • Keep it traditional with sour cream and fresh chives
  • Go sweet - sprinkle the sweet potato slices with ground cinnamon, marshmallows and a drizzle of dark chocolate

Description

Try something new for breakfast like these Mexican Sweet Potato toasts topped with all avocado, bacon and eggs.

Ingredients
  • 1 sweet potato
  • 8 cherry tomatoes (halved)
  • 1 avocado (sliced)
  • 2 eggs
  • 2 slices of smoked bacon
  • 1 spring onion (sliced)
Instructions
  1. Preheat the oven to 180 oC

  2. Clean the sweet potato and slice into 4 1/2cm slices

  3. Place the potato slices on a baking sheet

  4. Bake in the oven for 25 minutes or until cooked

  5. Poach the eggs in boiling water until the whites cooked but the yolks runny, about 3 minutes

  6. Fry the smoked bacon until crisp
  7. Place the sweet potato slices on a plate and top with the tomatoes, avocado, spring onion, poached eggs and smoked bacon
