Welcome to my first baking recipe for Cherry Spice Cake. A light, fluffy sponge with fresh cherries and a swirl of cinnamon brown sugar.
If you are finding it tricky to get fresh cherries then you can use frozen cherries. They are best to be mixed into the cake batter while they are still frozen. If you defrost them first then it can make the cake batter a bit too liquid.

If you are in the mood for baking try this beautiful Cherry Spice Cake. A light, fluffy sponge with swirls of cinnamon and brown sugar.
Preheat the oven to 180 oC
Grease and line an 8" cake tin
Whisk together the natural yoghurt, melted butter and egg
Stir in the flour and caster sugar
Mix in the cherries
Pour into the cake tin
Mix together the cinnamon and brown sugar
Sprinkle on top of the cake and swirl into the cake batter with a knife
Bake in the oven for 35 minutes
Remove from the tin and allow to cool before serving
