Cherry Spice Cake

pinit

Welcome to my first baking recipe for Cherry Spice Cake. A light, fluffy sponge with fresh cherries and a swirl of cinnamon brown sugar.

If you are finding it tricky to get fresh cherries then you can use frozen cherries. They are best to be mixed into the cake batter while they are still frozen. If you defrost them first then it can make the cake batter a bit too liquid.

Alternatives

Not a fan of cherries then this recipe works will with any kind of fruit. You might want to try out one of this options:

  • Diced Apple
  • Quartered Pears
  • Halved Plums
  • Strawberries and Raspberries
