Italian Apple Cake

My latest baking recipe is for this beautiful Italian Apple Cake. I made this for dessert on New Year’s Day and it went down a treat. I do admit to enjoying a leftover slice for breakfast the next day with a big cup of coffee. Probably not the healthiest start to the year eating cake for breakfast on the 2nd of January but such is life.

Italian Apple Cake

Although this cake takes 55 minutes in the oven to cook it is pretty quick to put together. All you need to do is chop up your apples and make a simple cake batter. Don’t be put off when the cake mix is thinner than what you usually expect for a cake. The correct consistency for this is much more like a pancake batter.

Don’t be tempted to omit the lemon zest from this cake. For such a small ingredient it really brings all the flavours together in this cake.
