Peanut Butter Banana Bread

Welcome to my latest baking recipe for Peanut Butter Banana Bread. A twist on traditional banana bread with some peanut butter and chocolate chips added in.

I find I usually make banana bread when I have a couple of leftover ripe bananas at the end of the week. Funnily enough during the first lockdown when the nation went baking mad, banana bread was the most searched for recipe!

Alternatives

If you aren’t a fan of peanut butter then you can leave it out. You might want to try out one of this options instead:

  • Fresh raspberries
  • Add in some cocoa powder
  • Add in a swirl of cinnamon sugar
  • Strawberries

Description

Try baking a twist on your usual banana bread with my super simple recipe for Peanut Butter Banana Bread with chocolate chips.

Ingredients

Instructions

  1. Preheat the oven to 180 oC

  2. Cream the butter, peanut butter and sugar together until light and fluffy, about three minutes

  3. Add the eggs, beating well between each addition

  4. Mash the bananas and add to the mixing bowl

  5. Add in the dry ingredients and mix well

  6. Stir in the chocolate chips

  7. Line a 900g loaf tin with baking parchment

  8. Bake in the oven for 55 minutes

  9. Remove from the tin and leave to cool on a rack for an hour before slicing

  1. I had two ripe bananas left and looked at Fiona’s site for a recipe to use them up. It was well worth it. The cake turned out very well and was a hit with my husband.

Hi there I can not have no sugar in my diet as well as gluten & none dairy as I have ulcerative colitis , can you recommend a alternative to the caster sugar in your recipes please . bearing in mind I can not have artificial sweetners or preservatives either . Im extremely limited you see & would love to make them , warmest wishes . gaynor.
