My latest baking recipe is for this beautiful Italian Apple Cake. I made this for dessert on New Year's Day and it went down a treat. I do admit to enjoying a leftover slice for breakfast the next day with a big cup of coffee. Probably not the healthiest start to the year eating cake for breakfast on the 2nd of January but such is life.
Italian Apple Cake
Although this cake takes 55 minutes in the oven to cook it is pretty quick to put together. All you need to do is chop up your apples and make a simple cake batter. Don't be put off when the cake mix is thinner than what you usually expect for a cake. The correct consistency for this is much more like a pancake batter.
Don't be tempted to omit the lemon zest from this cake. For such a small ingredient it really brings all the flavours together in this cake.

Get into the kitchen and bake a beautiful Italian Apple Cake packed with fresh apples and a squeeze of lemon juice.
Preheat the oven to 180 oC
Grease and line a 9" springform cake tin
Core all three apples, slice one into wedges and cube the other two
Place the apple wedges in the base of the tin
In a large bowl beat together the eggs, sugar, butter, milk, flour, and zest until it forms a batter
Stir in the other two diced apples
Pour this mixture over the apples in the cake tin
Bake in the centre of the oven for 55 minutes
Remove from the oven and invert onto a plate
Serve either hot or cold
