Hello everyone, I definitely need a coffee and one of these delicious Triple Chocolate Cookies right now. As well as lockdown we now have a fair amount of snow. So much so that my usual Wednesday night weekly shopping delivery was cancelled.
I trudged through the snow to the local shop to buy some milk - I can't do without my morning cappuccino! I've challenged myself to make do with what I have in the freezer.
So far I haven't done that bad, I've made and will share the recipes for the following:
I made these Triple Chocolate Cookies with my niece a few weekends ago. They were definitely a hit - the perfect balance of crisp outside edge and chewy soft centre.

If you fancy doing some baking this weekend then get into the kitchen and try this easy recipe for Triple Chocolate Cookies.
Beat together the butter and sugar
Whisk in the egg
Stir in the flour, cocoa powder, baking powder and chocolate chips
Chill in the fridge for 30 minutes
Preheat the oven to 180 oC
Line a baking sheet with parchment paper
Divide the cookie dough into 9 balls
Place on the lined baking sheet and flatten into discs
Bake for 10-12 minutes
Allow to cool on the baking sheet for 10 minutes before transferring to a cooling rack
