Caramelised Onion Hummus

Hummus is a dip or spread originating in the Middle East. It is made from chickpeas, lemon juice, olive oil and tahini. There are many variations available from roasted red pepper to white bean and garlic. My favourite is, of course, caramelised onion hummus.

Health Benefits

Due to the ingredients, many of which are classed as super foods, hummus is made from it can be a better alternative to creamy dips. Health benefits can include helping to fight inflammation, improving blood sugar control, and lower heart disease risk. Hopefully they are true, it not, it still is a tasty dip!

Serving Suggestions

Some of my favourite ways to serve hummus include:

  • Hummus with roast chicken and salad is the perfect summer dinner
  • Used as a dip with freshly baked pitta breads
  • Served as a side was Moroccan spiced lamb shanks
  • Used as alternative to avocado with toast and poached eggs for breakfast

Description

A beautiful caramelised onion hummus made with fresh chickpeas, tahini, lemon juice and olive oil. A quick and easy dip to accompany any meal.

Instructions

  1. Caramelise the onions and garlic in a saucepan over a medium heat, this takes about 10 minutes. The onions should be soft and golden but not crispy.

  2. Add all the ingredients into a blender and blitz until smooth. If the humous is too thick add more olive oil or water.
