Breakfast Knickerbocker Glory

Maybe a little out of season but I am sharing my Breakfast Knickerbocker Glory recipe. I used to think this was just for summer especially on a hot day enjoying breakfast in the garden.

Although it is January and freezing cold outside I still find I am drawn to this recipe and wanted to share it with you all. I just turn the heating up a bit and pretend it is the summertime!

Dessert for Breakfast?

I was sold on this recipe when I could pretend I was having dessert for breakfast! I’ve layered up granola, raspberry sorbet, mango sorbet, fresh strawberries and mandarin oranges to create a perfect Breakfast Knickerbocker Glory.

Making It Your Own

As with a lot of my recipes you can follow this as a guide but create your own flavour combinations. For example, you could swap the raspberry sorbet with lemon sorbet and the strawberries for blueberries.

I’ve also made a dessert version of this with rich dark chocolate sorbet, pear sorbet, granola and fresh pears.

It also works well with a scoop of homemade frozen yoghurt. I’ll need to photograph and write up my recipe for my berry frozen yoghurt. Something to add to my recipe to do list which is growing everyday.

Instructions

  1. Place half the granola in the base of two glasses

  2. Top with a scoop of mango sorbet and raspberry sorbet

  3. Sprinkle on the rest of the granola

  4. Top with the oranges and strawberries
