Prawn Tom Yum soup is a Thai soup with a hot and sour flavour, Tom Kha is similar but has a coconut milk base. This recipe is perfect if you want a healthy lunch but are short on prep time as it only takes 15 minutes.
I kept it simple by using stir fry veg, prepped prawns and tom yum paste which I picked up in Tesco.
As with most of my recipes you can customise this to suit your own tastes – pick what veggies you want to use and you can swap the prawns for chicken or extra vegetables.

Prawn Tom Yum Soup

Place the oil in a pan over a medium heat

Add in the veg and stir fry for a couple of minutes

Add in the tom yum paste and cook for 1 minute

Pour in the vegetable stock and simmer for 5 minutes

Add in the prawns, sriracha, sugar, lime juice and fish sauce

Cook for 5 minutes

Add in the coriander and season to taste
