This recipe for Caprese Toasties can be made gluten free by swapping out the bread with a gluten free alternative. Making it a great option if you have family members who require a special diet. Caprese Toasties

Caprese toasties with sourdough bread, basil pesto, mozzarella and tomatoes



  1. Preheat the oven to 200 oC
  2. Layer 2 slices of sourdough bread with the cheese, tomato and pesto.  Sandwich together with the remaining slices of bread.
  3. Beat together the egg, milk and seasoning and dip the sandwiches in the egg mix
  4. Fry for a couple of minutes on each side in a shallow pan over a medium heat
  5. Transfer to a baking sheet and bake in the oven for 5 minutes
