Hello everyone, my latest light bite recipe is for Tomato and Basil Bruschetta. I like to make my bruschetta with ciabatta bread but you can use whatever bread suits your preferences.
Other Light Bites
I’ve been working away on a few new recipes for Light Bites. In the next couple of weeks I’ll add in a lovely Thai Veggie Noodle Bowl recipe and a Traditional Chicken Soup. I’m also working on a new recipe for twice baked potatoes and some homemade sausage rolls.
You can get into the kitchen straight away and make one of my other light bite recipes:
- Try out one of my hearty soup recipes Spiced Red Lentil Soup
- Have a salad bowl with my Smoked Salmon Salad Bowl
- Have some orzo with my Fresh Veggie Orzo Pasta Salad
Hope you find some new cooking inspiration and ideas.

Free From Alternatives
This Tomato and Basil Bruschetta recipe is naturally dairy free. You can also swap the ciabatta for gluten free bread. Making it a great option if you have family members who require a special diet. If you are after more recipes which fully accommodate a free from diet then check out my sister website Free From Favourites: https://www.freefromfavourites.com/.
Enjoy!

Tomato and Basil Bruschetta
Description
One of my favourite Italian starters - Tomato and Basil Bruschetta. I've used a toasted ciabatta with garlic butter, tomatoes and fresh basil.
Ingredients
Instructions
-
Slice the ciabatta into three and then cut those pieces horizontally in half
-
Add the minced garlic to three tablespoons of the olive oil and drizzle over the bread on both sides
-
In a small bowl add the remaining olive oil to the chopped tomatoes and season to taste
-
Tear up the basil and stir through the tomato mix
-
Heat up a grill pan and toast the bread on both sides until golden brown
-
Top the bread with the tomato mixture
