Hello everyone, today’s recipe is for one of my all time favourite breakfasts, Avocado & Poached Egg Sourdough Toast. There is nothing better than a perfect piece of sour dough toast topped with eggs and avocado. I’ve kept this simple – just some smashed and sliced avocado for some different textures. I poached my egg for three minutes so it still has a perfect runny centre.
I’ve got quite a few recipes sitting in draft that I need to write up and with you all. Including a banoffee pie, some Easter cookies, bruschetta and a lovely slow cooked Thai pork with noodles.

Avocado & Poached Egg Sourdough Toast

Mash the avocado and season to taste with salt and pepper. I sometimes like to keep a couple of slices of avocado back to decorate the toast.

Toast the sourdough bread and top with the mashed avocado.

Bring a pan of water to the boil and then turn down to a simmer. Poach the eggs for 3 minutes.

Place the poached eggs on top of the avocado toast. I added some extra seasoning, a few chilli flakes and some fresh coriander.
