Hello everyone, my latest post is for an easy lunch recipe – Red Thai Sweet Potato Soup. I had some red Thai curry paste leftover from a curry I had made. I decided to construct a new soup recipe based around it. I’ve used sweet potatoes and some coconut milk to make it creamy and balance out the spice.
This recipe freezes well so you can double the quantity of the recipe for future use. Use half of it for lunch and then pop the rest into the freezer for another week.

Place the olive oil in a large pan over a medium heat

Add in the onion and garlic and saute for 5 minutes

Stir in the red Thai curry paste and allow to cook for a couple of minutes

Add in the sweet potatoes, chopped tomatoes, coconut milk and vegetable stock

Bring to the boil and simmer for 20 minutes or until the sweet potatoes tender

Season to taste and blend until smooth
