Hello everyone, I’m sharing another prep ahead breakfast recipe for delicious Blueberry Chia Pudding. Chia seeds are packed full of fibre and protein making them a healthy start to your day. If I’m having this for breakfast I usually prep it on a Sunday night and have the chia pudding for breakfast on Monday and Wednesday. You can then top it with whatever you like – I usually go with a little yoghurt and a few berries.

This Blueberry Chia Pudding recipe is naturally gluten free. Making it a great option if you have family members who require a special diet. You can easily make it dairy free but using almond or soya milk.

  1. Place the milk, blueberries and honey in a blender

  2. Blitz until smooth

  3. Stir in the chia seeds and divide between two bowls

  4. Chill in the fridge for a couple of hours or overnight

  5. I served mine with berries and a little Greek yoghurt
